Pancake day is fast approaching but that doesn’t mean you have to totally abandon your diet just for an excuse to stuff your face with yummy pancakes! Because lets face it, you’ll only feel guilty afterwards. Using this recipe, you can create completely healthy pancakes using all natural ingredients and not feel an ounce of guilt! Or an ounce of extra weight for that matter. For anyone who is Paleo, this is a 100% paleo friendly recipe.
You will need:
-2 bananas (as ripe as possible)
-3 eggs
-2 generous tablespoons of almond butter
-a handful of dessicated coconut
-coconut oil
This serves around 3 decent sized pancakes
Method:
- Crack your eggs, peel your banana, scoop in your almond butter and shake in your dessicated coconut all in one bowl
- use a masher (used to make mashed potatoes) to mix these ingredients until it becomes slightly sloppy but obviously blended. You can of course just use a blender but I didn’t have one to hand so I used this instead.
(this picture isn’t totally necessary as it looks pretty disgusting but it’s just to give you an idea of how it’s meant to look!)
-After you have blended your ingredients, fry some coconut oil (don’t be afraid to be generous with it) off into a frying pan, on medium heat and then pour a third of the mixture into the pan.
-Use a spatula to carefully lift the edges of the pancake until you are able to get the whole spatula underneath it.
-If you are confident in flipping it, do so. If not leave it where it is and place the frying pan under the grill to cook the other side
When it’s finished, you should have something that looks like this:
There are many variations of this you could do to adapt it to your personal tastes such as adding a little honey, dried fruit and less or more of the other ingredients.
